How to cook Special Pork Mechado

Pork Mechado is a Filipino stew dish traditionally made with beef, but pork is a delicious and more affordable alternative. It’s stewed in a savory tomato-based sauce with vegetables, often enriched with soy sauce, vinegar, and seasonings. Here's a simple but flavorful way to cook Pork Mechado:

🍲 Pork Mechado Recipe

Ingredients:
  • 1 kg pork (preferably pork shoulder or belly), cut into chunks
  • 3 tbsp soy sauce
  • 2 tbsp calamansi juice or lemon juice
  • 1/2 tsp ground black pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 medium potatoes, peeled and quartered
  • 1 large carrot, peeled and sliced
  • 1 bell pepper, sliced
  • 1–2 cups tomato sauce (adjust based on your preference)

👨‍🍳 Instructions:
  • In a bowl, combine pork, soy sauce, calamansi (or lemon) juice, and pepper. Let it marinate for at least 30 minutes (1–2 hours for best flavor).
  • Heat oil in a large pan or pot. Sauté garlic and onion until fragrant and translucent.
  • Add the marinated pork (reserve the marinade) and brown the meat on all sides. This helps lock in the flavor.
  • Stir in the tomato sauce, reserved marinade, tomato paste (if using), bay leaves, and water or broth. Bring to a boil.
  • Lower the heat, cover, and simmer for about 45 minutes to 1 hour, or until the pork is tender. Stir occasionally and add more water if it gets too dry.
  • Add potatoes and carrots. Simmer for another 10–15 minutes until vegetables are cooked.
  • Add bell pepper (and optional hotdogs or peas). Simmer for 3–5 minutes more. Adjust seasoning with salt, pepper, and a pinch of sugar if needed.
  • Serve hot with steamed rice!
