🍲 Pork Mechado RecipeIngredients:
- 1 kg pork (preferably pork shoulder or belly), cut into chunks
- 3 tbsp soy sauce
- 2 tbsp calamansi juice or lemon juice
- 1/2 tsp ground black pepper
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 medium potatoes, peeled and quartered
- 1 large carrot, peeled and sliced
- 1 bell pepper, sliced
- 1–2 cups tomato sauce (adjust based on your preference)
👨🍳 Instructions:
- In a bowl, combine pork, soy sauce, calamansi (or lemon) juice, and pepper. Let it marinate for at least 30 minutes (1–2 hours for best flavor).
- Heat oil in a large pan or pot. Sauté garlic and onion until fragrant and translucent.
- Add the marinated pork (reserve the marinade) and brown the meat on all sides. This helps lock in the flavor.
- Stir in the tomato sauce, reserved marinade, tomato paste (if using), bay leaves, and water or broth. Bring to a boil.
- Lower the heat, cover, and simmer for about 45 minutes to 1 hour, or until the pork is tender. Stir occasionally and add more water if it gets too dry.
- Add potatoes and carrots. Simmer for another 10–15 minutes until vegetables are cooked.
- Add bell pepper (and optional hotdogs or peas). Simmer for 3–5 minutes more. Adjust seasoning with salt, pepper, and a pinch of sugar if needed.
- Serve hot with steamed rice!
