How to cook Butter Garlic Shrimp with Corn

🦐 Saucy Butter Garlic Shrimp

🧂 Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined (tails on or off)
  • 2 tbsp olive oil
  • 2 tbsp olive oil
  • 4–5 cloves garlic, finely minced
  • 1 tsp paprika (optional for a smoky flavor)
  • ½ tsp chili flakes (optional for heat)
  • Salt and pepper, to taste
  • 2 ears fresh corn, kernels cut off (or 1.5 cups frozen corn)
  • Juice of ½ lemon or sprite (plus more for serving)
  • 2 tbsp fresh parsley, chopped (optional)
  • Optional: 1 tbsp white wine or chicken broth (for added depth)

🍳 Instructions:
  • Pat shrimp dry and season with a pinch of salt, pepper, and paprika if using.
  • Cut kernels off the corn if using fresh.
  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add corn and cook 3–5 minutes until slightly browned and tender.
  • Season lightly with salt. Remove from skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp olive oil and 2 tbsp butter.
  • Add garlic and cook for about 30 seconds (don’t let it burn).
  • Add shrimp in a single layer. Cook for 2–3 minutes per side until pink and opaque.
  • Add chili flakes (if using) and deglaze with wine or broth if using.
  • Return corn to skillet.
  • Add remaining 2 tbsp butter and squeeze in the lemon juice.
  • Toss everything to coat. Adjust seasoning with salt and pepper.
  • Sprinkle with chopped parsley if desired.
